In recent years I have become a Caesar salad superfan. I feel like all sorts of salads can be hit and miss at restaurants and Caesar seems to be especially commonly bungled. I really like making my own at home and find them to be SO delicious and satisfying for lunch or dinner. I really like this smitten kitchen recipe as a general guide though I will say I have a few alterations when I eat it at home. I don't REALLY think it needs cheese (it's already so delicious and flavorful). I have icky feelings about fish so I don't put anchovies, but I have found that putting fish sauce in instead of anchovies is delicious, easy and still gives that super umami-ness that a good Caesar dressing needs. My other strongly held belief about dressing is that you have to do it by taste/with your heart and the amounts in the recipe are more of a guide than a rule (I will totally put 4 cloves of garlic into my dressing). Also, if you're not already making your own croutons this is your sign to start! They really are better and (unlike some cheffy things) are really easy and quick to make.
