FatBoy Ice Cream Sandwiches

My little brother turned me onto these. I had my first one ever right outside Great Basin National Park (which could be part of the reason I love them so much). I was really never a big fan of the grocery store version of ice cream sandwiches, but these really hit the spot. They’re just like an ever so slightly elevated version of the basic ones. The ice cream is very rich and creamy. They are a perfect and satisfying treat.
